Before Darlish opened at 5 French Row, Laura had featured as a guest on my Meet the Local series. I was already intrigued by the flavours that I had seen on the website and having not personally tried any Persian food I was excited by the new addition to St Albans.
Laura juggles life as a speech and language therapist with her ice cream business. Originally selling directly to retailers, including Selfridges, she decided to open an Ice Cream parlour in her home town.
I managed to pop in to Darlish before it opened to the public as Laura and her family were putting the final touches to the parlour. Behind the counter are two large chalkboards – one describing the process of creating Darlish Ice Cream and the second detailing the different flavours available. There’s an array of ice cream flavours from Chocolate and Halva to Orange Blossom and Pistachio, plus you’ll also specials on the board too.
There’s seating at the back of the store with brightly coloured scattered cushions as well as window seats if you want to sit down and enjoy your frozen treat.
As well as serving ice cream, sorbets, floats, juices and hot drinks. You can also buy Persian and Arabian products including rose water, jams and sweets.
I opted for the rhubarb, pomegranate and rose sorbet which had a dusting of rose petals across the top. It tasted amazing and is the type of dessert you’d expect to receive in a fancy restaurant.
