Last night I was kindly invited along to the opening of a Secret Garden – now that’s a super exciting invite to receive. St Albans Bill’s is just one of three Bill’s that has recently undergone a beautiful refurb. The interior is now more colourful, cosier and filled with stunning velvet seating. I was lucky enough to meet Bill Collison, the man behind Bill’s – it was great to hear him talk through the revamp and how he picked the new decor. There’s even a few pieces from his home that he has put into the restaurant which really goes to show just how homey it is.
Bill’s has become a go to destination for brunch, but they really want it to become a venue for evening dinner and drinks. So there is a now a brand new bar where you can order fabulous cocktails as well as nibbles and plates for sharing. But on a glorious sunny day they now have a secluded garden for you to enjoy.
The garden is beautifully decorated with bright red parasols, fairy lights and antique mirrors, that Bill personally picked himself.
On arrival we were treated to a summery spritz cocktail filled with cucumber, raspberries and edible flowers. There was a lovely buzz as people chatted away with a guitarist playing in the background. I got to meet the lovely Sarah from Simply St Albans.
We were served a fabulous array of canapés by the friendliest staff. From spicy lamb & beef meatballs with chilli jam to devilled chicken skewers with lime every single mouthful was delicious. A number of the canapés feature on Bill’s Bar Menu.
My personal favourite was the fried halloumi – I couldn’t help but pick up two pieces at a time and of course go back for seconds! On the bar menu they actually have a Halloumi plate which is my idea of heaven.
Then to finish off we had the cutest triple chocolate brownies with a strawberry perched on top. The perfect way to end some a wonderful evening.
The evening made me so excited for sunny days and although it is no longer a secret I can’t wait to relax in Bill’s garden with my friends this Summer!
